If you have room, move the model further from the white and let natural fall off turn it gray. Adjust your aperture and distance to the BG to get the level you want.

It's much harder to evenly light black to make gray, plus you get some bounce back. Then there's the floor to deal with also.

This is a white BG with 10' between the model and the BG.

put light on a black backdrop or no light or underexpose the white. If you need a even light you may have to us a couple lights and experiment some.
Its possible to make a black background white by adding more light.

I like Storm Gray from Savage or Thunder Gray from Superior. You can use them unlit for a charcoal color:

Or expose it at EV 0 to get the 'true' color.

It's probably easier to let the white go grey if you have the space.

These (except the white) were all done with the same background, a Photek Peoplepopper. In the last one, the light tended to bring out the wrinkles, but the black actually ended up looking like the Photek Stormy Grey.

Looks like i'm going with the white. The black did not work out just right. The white was a bit easyer to work with. I hate last minute shoots and they have demands like the color back drop. One good thing is they are all 3/4 shots.
