You can save them off to your computer as FLV files (flash video). You'll need a flash video player. To save the youtube video, go to this link:
You would find the video you want on youtube, and paste the URL of the video into the box on the above link. They'll then give you a download link. If you don't have the free Flash Video player, they have a link there to download it. There is also a pay one, but don't download that. Also when you install the player, it will also want to install a tool bar, and several demos. Just say no to all of these.
Keep in mind that YouTube keeps changing things around to break these kinds of captures, so you'll need always verify that each download works.
