Since I shoot RAW, there is no real need for any of these settings. I usually just leave them set at the factory default. What I do try to do properly is to get optimal exposure and I try to use Custom white balance if I can. Of course, you may ask, why, since I can pick the white balance at Raw Conversion time? Well its a matter of getting a better preview and making RAW conversion faster. As for exposure, you always give up information if you have to do radical adjustments of exposure in the RAW processor.
Cheers,
rfs

First and foremost, unless you never plan to print anything, ever, change the color space setting from s(hitty*)RGB to Adobe 1998.

Now, I used to be a dedicated RAW shooter, but Rolando teased me into shooting JPG and I think I'll be using mostly JPG/Large/Fine from now on (not only will I save time importing, but I'll never have to buy another memory card, ever. Or until I get a new camera, anyway.)

I don't use custom white balance very often, but I might play with it more now that I'm going to be shooting mostly JPG.

I often do 1 - 2 stops less than film or metered and ramp up in PS.
Digi just does not hold detail in those highlight areas.

the brave jpg shooter soul.. it seems like everyone is shooting raw now a days.. for now im still shooting jpeg to try and get to the level where i can optimize the use of raw without to much conversion processing, like what rfs said. also, my memory card isnt too big to shoot a lot of raw files. as for white balance.. i found a site that lists the temperature of lighting conditions in kelvins i printed it out in case i need to refer to it.. Since digital is linear, you usually want to push the in camera histogram as far to the right as possible when adjusting exposure. This pushes the shadows higher on the histogram and thus gives more details in the shadows. I use the black/gray/white calibration target to zero in exposure settings.
Cheers,
rfs
