ok what are the differences between these two canon bodies. Got a tab on a EOS 1 for a pretty good price. Will the EOS 1 use the EX line of speed lites correctly or does it need the EZ?

Clint,

I don't own any of the camera bodies that you've mentioned, but if you're looking for basic differences between the two (besides the 11 year differences in technology), here are a few links:

I have both the 540EZ and the 550EX flashes. The 540EZ flash has A-TTL metering. This is an older system and works fine with my A2 film camera but DOES NOT work with ANY digital cameras. All of the EX line of flashes have E-TTL metering and work with both film and digital cameras. My A2 can use either EZ or EX flash but my D60 must use the EX. The EOS-1 should be the same.
