The reason you use a grey (gray) or white card is to provide a known reference in the image so that you can tell something about the color of the light hitting the subject.
You can then use the grey or white card with an adjustment software, like Photoshop, to neutralize the color shift of the light.
As you should be understanding by now, each of us see light in a slightly different way - some people find the "warm" colors more pleasing, some people prefer the more "neutral" colors, and some people like the "cool" colors. It's something you'll hopefully develop as you get more experience and confidence in your eyes.
Me? I definitely prefer the warmer colors, like "red"...
