Seeing the great results Rolando gets with his equipement, made me buy a couple of things like a Hensel beauty dish and some (bastard amber) gels.
Now I' not really sure how to put the gels to good use...

Do I put the gel inside the beauty dish or in front , or only over the center (gridded) part ? If inside, only onto the reflector , or covering the flashtube ?

And if I do, will the results of a gel be different from processing the white balance of the RAW image ?

Check out the "turn it blue" post in the nude section. Great shot of Rolando's set up.

If you use a white balance device in post, you will erase your warmth added by your gels. This assumes the gelled light hit the object you are using as a white balance target.

Shoot a custom White balance each time you change your lights WITHOUT your gels, then apply the gels and shoot in RAW. Your images will load with the warmth and then if you white balance you can remove it and compare the images to see how many points of color it has been changed. Then you can decide if it was too much or not enough and modify the image. Keep the original file and only play with copies.

Experiment where you put the gel. It will change the pattern of light. Normally, I would put it just behind the grid, using the grid to hold it in place. If it is in front of the grid, you could get scatter. If you want a weaker effect you can put strips of gels so that only half gets covered. That way you are sending white and warm light.
