The majority of photographer's I know, both pro and amateur use Photoshop CS2's RAW converter for dealing with Canon RAW photos. The workflow is very easy and very powerful and you are able to get optimum results with the ultimate Photographic manipulation program. Of course you can use programs like C1, Bibble, Breezebrowser Pro, the Canon software that came with your camera, Raw Essentials, and so forth, but all of them are less tightly integrated with Photoshop and all of them have, in my opinion, odd interface issues and require quite a learning curve.
If there is any interest, I'd be happy to publish my own workflow using Photoshop CS2 and its ACR.
