The 5D is a real "workhorse" camera in Canon's lineup. I've read everything from late 2007 (which obviously didn't happen) to never (after all, the 5D didn't really have a predecessor). While it may be replaced (and even if it's not, there are other newer models) you'll be happy with the 5D. The only real negatives (in my opinion) is a slow capture rate and the lack of dust control.
As for the glass, I'd really suggest the IS version of the lens. Even if you only need it infrequently, you'll be very glad you have it. I feel the same about the f/stop difference. You may not shoot at 2.8 much, but you'll be glad you have it when you need it. You'll also find it focuses better in low light and works well with a teleconverter. If it's a budget decision, I'd prioritize IS over the f/stop.
I currently shoot with a 40D body and use the 70-200 f/2.8 IS. However, for studio work, I find I use the 28-105 f/4L IS more than any other lens. I highly recommend it.
