Because an anti-aliasing filter in front or the CCD (or CMOS) filters out high frequencies.

This filters avoids moire, unwanted patterns artefacts that would otherwise show up whenever you shoot something like fabric, foliage, etc...

The filtered out high-frequencies are producing a softer final image.
