Here's the gel I use at sunset, its a theatrical gel called "Bastard Amber" available from Rosco Labs.
As for the warm shots during daylight outside, as I said, that is a style choice usually. Using a gold reflector outside, or warming gels on a large flash fill, or simply warming the whole thing to your liking with lens filters or in Photoshop, are all photographer options, and more likely to be a creative choice than an accident.
