Other than a hand held meter, you've got about everything you could want. For the F-1, I prerred the flat ground focusing screan with the polished center spot. Worked great for portrait type work. They go in under the finder (eye piece). I also used the AE finder.
Either camera will take pictures of about anything you want. I'd start with one and learn it before going on an leanring the other. You have a good assortment of equipment for the F1, so I'd suggest starting there. Look at which focussing screens you have. Somewhere in the manual it should tell you which one has which metering. That camera changed metering types (how much of the picture and where was metered) by changing the focusing screens.
